First, it depends on what count technique you'd use. I assume you're not referring to barcode scanning, since there's no way I can think of that the software could guide you as to what to scan.
If you are scanning barcodes, though (of course, the person scanning has to be familiar with each category - or each supplier), once you're done with the scanning of a Category, you can - while still in that Count - open "Items not Counted and In Stock", choose the Category you're scanning, and find out which items weren't there to scan but have quantities in the POS. Though this doesn't exactly address your question, it seems like a notable feature.
To count by Category, if you have a portable device you can go to Items/Count/New Inventory Count/Items not Counted. That will take you to a list of Items in that Category, where you'll see a "count" field on the far right that you can enter quantities into. I have to admit that it took me quite a while to realize that was there. And I don't know of a way of bringing it up by Supplier.
If you don't have a portable device (i.e., are just counting on paper), the easiest way we've found is to filter Items by Category or Supplier in the Items module, and then export to xls and arrange the list any way you want for counting. It's pretty fast to enter it manually into a Count then.
This is not meant as any kind of authoritative summary - it's just what we've found works for us. It seems that one approach will work best for some part of the inventory, and another for a different part. And I'm sure there are even more ways it can be done.
